2023 Domaine Pierre Guillemot Savigny-les-Beaune Vieilles Vignes Cote de Beaune, France Burlotto The Auxerois and Pinot BlancThis cuve is sourced from the domaines oldest Savigny parcels, where deeply rooted vines on classic clay limestone soils yield naturally lower yields and greater concentration. The fruit is hand harvested, fully destemmed, and fermented with native yeasts in traditional open vats. Aging takes place in older Burgundy barrels to maintain purity of site, with gentle handling throughout and minimal intervention prior to bottling without fining.
